Razor sharp knives !
I have tried so many manual sharpeners that didn't do the trick (and wasted money in the process). I am not confident that I could do a good job with a stone. It is very easy to use and takes no time at all to renew the blade to a perfect edge.My cousin recommended this to me and I am thrilled. My knives are happy again! And they now cut like when I first bought them. I have European and Asian knives. This worked great for both. Even my serrated knives are now sharp.I would recommend this to everyone.

Great sharpener for both 15 and 20 degree edge knives and very easy to use
This brand sells about 30 different electric knife sharpeners. I spent many hours comparing them before I picked this one to buy. Most models sharpen at either 15 degrees or 20 degrees, but not both. Older US or European kitchen, pocket or hunting knifes are 20 degrees. Asian knifes are 15 degrees. Practically all newer kitchen knifes are 15 degrees. I wanted the ability to sharpen both. This model, the Chef's Choice 290 does both 15 and 20 degrees and does it very well. I have a set of 8 Victorinox knifes. Some have been used a lot and needed sharpening while a 10 inch Chef's knife and a 6 inch filleting knife have never been used. Victorinox is known for their knives sharpness. In only a minute or two each I was able to make the worn knifes and as sharp as the new ones. They sliced a sheet of paper like a razor blade. If you purchase this sharpener I'm certain you will be more than pleased with it.

This thing is so good and so easy to use
I used it on some cheap Henckels that I have had for years. It quickly sharpened them. It is really easy to use and does a great job. I am not sure why I didn't buy one sooner.

As Good As My Old Chef's Choice Sharpener
It happens. We have to let go at times in our lives. It happened to me. I had to trash my almost 15 year old Chef's Choice knife sharpener. I got it at our local Bass Pro Shops (yup, hubby and I are ADDICTED to bass fishing). I have about 30 or so Wustof, Swiss Victorinox and Henkel knives. I'm either in the kitchen or cardiologists office.I LOVE TO COOK AND CHOW DOWN.My old Chef's Choice knife sharpener always came through, and put a very, very good edge on my CONSTANTLY used, dropped, washed and dog chewed (Great Pyrenees) assortment of knives. It finally just bit the dust, so I retired it and replaced it with this model. Technology has come a longgggg way in the past couple of decades, and disappointingly, a lot of old dependable companies have chosen the massive one time sell, with NO regard for their companies reputation or future. Not the case with Chef's Choice. Not only does my brand, spanking new knife sharpener meet the performance of old faithful, RIP, so far....it is exceeding it.My husband is an avid pocket knife and blade enthusiast. He sharpens his array of artsy farsty knives with some kind of big ass contraption...that is incredible...but, definitely NOT farm, kitchen wife friendly. This sharpener, not only puts an excellent edge on a good knife....it's easy to use, very little storage space required and doesn't fling metal shavings all over the damn place.I highly recommend this sharpener. And no, I'm not a product reviewer, cousin of anybody at Chef's Choice.....just a retired geologist turned housewife that cooks everything from greens and cornbread to Chateaubriand for guests.
