Foolproof?! Good
Should have gotten this years ago. No guess work, no hassle. Takes a bit of practice to get going but after that you’re good. Be sure to read the manual well or even multiple times. Keep it near during the first few tries. It’s quite specific. But results are consistent and scarily sharp like never before like with manual sharpening (at least for me; never had consistency and most of the time medium results)

I confess that the first time I used it, I was a bit disappointed. It did not seem to be sharpening the knife all that well. I then ran the blade through the first set of sharpening grooves some twenty times, followed by ten or so times through the second set, and I ended up with a good edge. Since then, I have been touching up my chef's knife every week running it a few times through the first set and a few times through the second set of sharpeners. Now, every time I touch up my knife, it seems to be getting sharper and sharper. I can easily cut through a ripe tomato simply by pulling the blade over the tomato without applying any pressure. The main advantage of this little sharpener as opposed to my usual method of hand sharpening my knives is that I can do it more often. The effort of sharpening my chef's knife by hand meant that I waited until it was quite dull to actually do it. Now, I can simply pull out this little sharpener, run my knife through it a few times, and I am good to go. Thus, I have a sharp knife all the time, instead of having a sharp knife for a few days that progressively gets duller and duller. So, even if might be a smidgen less sharp than it would be when doing it by hand, I have on average a much sharper knife all the time now that I have the Chef's Choice 315XV. I would certainly recommend this to anybody who wants to have a sharp knife at all times when working in the kitchen.

This product performs as marketed.
This is a good unit and sharpens straight and serrated knives as marketed. Further, it reshapes the cutting edge to the optimal angle which yields a better finished product. I had a previous Chefs Choice model which worked well but not as refined as the 315XV. The latest model has a magnetic cleanout trap to collect the fillings which the previous model did not and contributed to its demise. I recommend this product and it is competitively priced.

Great Product
Great little kitchen tool, It made my knives pretty sharp. Ive used it for a few weeks now and it was a good purchase. I wish it was a little bigger for my bigger knives, but it was a good product .

Don’t use on scissors
Do not use on scissors . It tells you not to BUT had to try . It ruins scissors .
